Sauce Blanquette
"The world's easiest and perhaps most versatile sauce". That's how Brian Mark describes sauce blanquette, for which he gives you his recipe here. The sauce is easier to make than, for example, hollandaise, and it works well with an incredible number of dishes. Brian Mark is head chef at the Michelin restaurant Søllerød Kro, and in 2023 he won the unofficial world championship for chefs, Bocuse d'Or. One of the things Brian Mark is especially recognized for is precisely his sauces, which he has a special passion for: "We live for sauce, because sauce is the essence of all kitchens".

Ingredients

100 g
butter
100 g
chicken stock
2
egg yolks
1
large tbsp rich creme fraiche
1 tbsp
flavored vinegar - here tarragon vinegar is used
Salt
Pepper
Avoid screen shutting off

Instructions

Step 1/4
Heat the butter in a casserole with chicken stock. Set the mixture aside.
Step 2/4
Mix egg yolks, creme fraiche, vinegar, a pinch of salt and a little freshly ground pepper in a casserole or bowl, and whisk it together.
Step 3/4
Pour the butter and stock mixture into the egg mixture in a thin stream, while blending with an immersion blender.
Step 4/4
Taste and season with salt and pepper.
