What is the difference between cast iron and enamelled cast iron?
Classic cast iron cookware, such as a raw cast iron frying pan, requires seasoning to build up a natural nonstick surface. Enamelled cast iron, on the other hand, is coated with a layer of enamel that protects against rust and makes it easy to clean. It does not need to be maintained with oil and requires no seasoning—you can use it right out of the box.
What can I cook in cast iron?
Cast iron is extremely versatile. You can use it to simmer, fry, braise, bake, and even deep fry. The even heat distribution makes it perfect for everything from boeuf bourguignon and goulash in a casserole, to a perfectly seared steak in a frying pan, to casserole bread and oven-roasted chicken.
Can cast iron be used on induction and in the oven?
Yes. Enamelled cast iron can be used on all heat sources – including induction, gas, electric, and ceramic. It can also withstand oven temperatures up to approx. 290 °C. Just remember to use pot holders, as cast iron retains heat long after cooking.
Can I bake in cast iron?
Yes, you can. A cast iron casserole, for example, acts like a small oven inside your oven, transferring heat to your bread incredibly efficiently and retaining moisture so that the dough has time to develop optimally before the crust sets.
How do I clean my enamelled cast iron?
Allow the cookware to cool before washing it in warm water with a little dish soap and a soft sponge or brush. Avoid steel wool and abrasive cleaning agents, which can scratch the enamel. Dry it thoroughly after washing to prevent rust on the rim.
