Boil the potatoes in their skins until just tender. Let them cool, then peel them.

Spread the sugar evenly in a frying pan and let it melt over medium heat.

Add the butter, turn up the heat, and stir to combine.

Add the potatoes and toss them in the caramel sauce for 6–7 minutes, until they are heated through and beautifully glazed.
